Chickpeas make a beautiful team with grape tomatoes. They are my favorite combination for bento salad.
In the midst of the heat, vegan and grain free diets are the best.
5oz or 142 g standard size bag of organic mixed greens of your choice
1/3 cup chickpeas cooked
1/2 cup grape tomatoes halved
1/2 cup berries (blueberries +raspberries +blackberries)
2 tbsp raisins optional
1 tsp lemon juice
2 tsp cumin
1 tsp oil
2 dried whole red chillies broken
Salt to taste optional
Organic cold pressed Olive oil for dressing 1 tbsp
In a pan, warm the tsp of oil and toast the cumin and red chillies. Mix in the chickpeas and saute for 2-3 mins. Garnish them with lemon juice and mix.
Toss the greens gently with the berries and tomatoes. Mix in the chickpeas and toss until they are evenly distributed.
Serve the Salad with olive oil dressing.
Enjoy the nutritious and dairy, grain free healthy salad. Addition of chickpeas will add required protein and calcium.
If this is for bento, add lemon juice just before serving. Else, the greens will become soggy.
