Ragi (finger millet) is a native millet to Bangaloreans . The millet is a rich source of calcium , protein and iron . It is also a gluten and grain free alternative. Ragi is mildly sweet and makes a good ingredient for cookies and smoothies and also in our morning oatmeal.
I have been exploring different options to substitute Cliff and Kind Bars and this millet rang the bell for me .
Made these Ragi and Raw Cacao vegan cookies for my to-go “snackisfaction” .
1.25 cup almond flour
3 tbsp Ragi Millet flour
1/8 cup raw honey/maple syrup
3 tbsp Raw Cacao powder (I use CaliNaturals brand)
1/3 cup broken cashews
1/3 cup olive oil (or avocado oil)
A pinch coarse sea salt
1 tsp powdered cardamom
1/4 tsp baking powder
1 tbsp unsweetened dessicated coconut
Make a cookie dough (it’s sticky) with the above ingredients and mould the dough pops to a little thicker than a flat cookie . Stick the cookie tray into the preheated oven at 350F and bake until the cookies crack and brown on the sides , about 12 mins . Store in an airtight and moisture free cookie jar in the pantry .
