Cauliflower Salad with Grapes and Arugula

Cauliflower represents tree of life. Each floret is a tree on its own.  Due to its

cruciferous nature, cauliflower is a good ballpark ingredient for a salad especially

for weight loss.

1 cup cauliflower florets
1 small onion chopped
1/2 orange pepper chunks
1. 25 cup arugula
1/2 cup grape tomatoes halved
Mini Fuji apple sliced optional
1/3 cup black grapes

1 tsp cumin
1/2 tbsp coconut oil
1/2 tsp turmeric
2 tbsp cilantro
1 tbsp shaved almonds
1 tbsp pumpkin seeds
1 tsp natural sea salt
Crushed red chillies optional


Toast the cumin in oil and saute the onions and peppers. Boil the florets separately for a min until they are al dente.
Once, the onions are sautéed, add turmeric and stir fry the cauliflower florets, onions and peppers until evenly mixed. Add salt. Garnish with cilantro.

In a salad bowl, combine the greens, apples and the stir fried veggies, gently fold in the grapes and tomatoes. Mix in the seeds and nuts.

Another option would be to add 1/3 cup cooked chickpeas and use pomegranate arils.
