Beet, Tomato and Mozzarella Salad

TGIF doesn't mean binge eating to me but to eat deliciously healthy bento.
First and third Friday of the month remind me to eat Beets. Yes, our body needs to replenish the blood cells.
Tossed a salad today with Beets, jazz apples, Marinated mozzarella, spinach, tomatoes Almond and pumpkin seeds.

1 medium organic beet quartered and cooked to al dente
1 organic Jazz apple sliced
1 cup organic baby spinach washed
7-8 mini mozzarella balls Marinated
1 tomato sliced
4 sweet peppers sliced and Roasted

2 tbsp shaved almonds
2 tbsp pumpkin seeds
1 tbsp olive oil
3 garlic cloves pressed and grated
1.5 to 2 tsp crushed red pepper flakes


Marinate the mozzarellas with a tsp  olive oil, garlic and red pepper flakes for a few hours or overnight in the refrigerator.

Toss the spinach, Almond, peppers, pumpkin seeds and apples with olive oil. Then mix in the Beets. Serve with sliced tomatoes and the Marinated mozzarella.

You could add basil too.
