Super Bowl Sunday used to translate into binge eating until few years back. Not anymore.
Having been grain free most afternoons everyday has brought me close to mother nature. Its been farm/patio to table recipes for my bento, and am loving it. I have loved
harvesting tomatoes, kale,strawberries, jalapeƱos and many herbs in my kitchen patio.
I made this salad for lunch today to avoid junk food and this bowl will keep me full until late evening.
1/4 cup shredded organic Lettuce
1 small garden tomatoes sliced
1 navel orange quartered without rind
1 small Fuji apple sliced
1/4 cup cucumber semi roubdels
1 dried fig sliced
Black seedless raisins 4-5
2 tbsp pomegranate arils
1/2 Avocado cubed
1 tbsp toasted peanuts and almonds each
For garnish
Couple of sprigs of fresh mint torn
1 tbsp chopped cilantro
1 tbsp toasted pumpkin seeds
Lemon quarter
Mix in all the salad ingredients except Avocado in a bowl. When they are properly mixed, add the Avocados and garnish.
Add lemon juice just before serving.
Enjoy the salad fresh.
