It's that time of the year when we eat pumpkins, carrots and potatoes . Autumn brings in vibrant vegetables and dishes and not to forget pumpkin spices in lattes and smoothies .
Made a milkshake with apricots , walnuts and purple carrots . The dark Turkish apricots and nuts neutralized the purple hue of the carrot .
1 medium purple carrot boiled
5-6 organic Turkish apricots
2 tbsp walnuts
1/2 tsp organic cinnamon
2 cups 1% or 2% milk
1/4 water
Warm the apricots in the microwave for 40 seconds and make a smooth paste with walnuts and cinnamon by adding little water . Then blend the carrot with cinnamon with the nut paste .
Add the milk and pulse for half a minute until milk is frothy .
Serve warm or cold .
Substitute dairy with almond or any other non dairy beverage if lactose intolerant .
