Matcha and Semolina fudge ( Halwa)


Having loved matcha ice cream and smoothies ,  experimenting it  with Indian dessert sounded interesting .

Sheera or suji halwa is a common household Indian dessert which doesn't ask for elaborate process to make it. It is made from semolina , sugar , milk and nuts .

To reduce the sugar proportion in the dessert , I used coconut and dates .

1 cup semolina
1/4 cup coconut shavings
1. 25 tsp Matcha
1.3 cups organic sugar
2 cups milk lukewarm
5 tbsp + 2 tsp ghee
1/3 cup water

5 -6 Spanish cardamom pods
5 Mejdool dates chopped
1/3 cup slivered Almonds

In a tsp ghee , roast the dates and Almonds and keep aside .
In warm water,  grind the matcha and coconut together to make matcha milk .

In a deep pan,  roast the semolina with ghee and cardamom  .  Once it's roasted , add lukewarm milk and stir thoroughly . Let the semolina cook on medium flame . When the milk quantity is half , add the sugar and mix well stirring constantly so no lumps are formed .
When the semolina starts coming off the sides of the pan,  the fudge is almost done . Add the dates , nuts and Matcha milk and stir .  Cook for 3-4 mins and add the ghee . Mix and let it cool  on baking tray . Spread the fudge evenly so it's easy to cut into desired shapes  .
