Sprouted Moong and French Beans Stir Fry

Vegetable stir fry is a classic South Indian side dish that accompanies rice and
soup( sambar,rasam etc). These stir fries are dry and carry a seasoning of mustard, curry leaves and chillies.

Since I had some sprouted green mung bean,  it was handy and perfect ingredient to use with French beans.

3 cups 1 inch French beans
1/4 cup sprouted green mung
1 small green pepper julienned
1/4 cup green peas

1.5 tsp mustard seeds
4-5 dried red chillies broken
1/2 tsp cumin
1/4 tsp turmeric
A sprig of curry leaves optional

2 tsp coconut oil
1 tbsp coconut grated
1.5 tsp salt

In a wok, warm the oil and splutter the mustard seeds.  Add the red chillies, curry leaves and turmeric.  Once they are slightly roasted, add the veggies and the sprouts. Add 1/8 cup water and cook the the veggies on low flame.  Add salt once the veggies are half cooked. The veggies are done once they are al dente but cooked.  Garnish with coconut. Serve hot with rice and lentil soup or with Roti.
