Cucumber salad with some lemon juice and coconut makes a perfect salad or a side
during heat wave. Super refreshing and soothing, detox food for our skin too. Easiest of all salads and less than 10 mins prep time.
1 regular cucumber chopped
3-4 tbsp freshly grated coconut or dessicated
1.5 tsp coconut oil
3/4 tsp mustard seeds
1.5 broken dried red chillies
A tsp salt optional
1 tsp lemon juice
Cilantro 2 tbsp finely chopped
1 tbsp coarsely hand crushed roasted peanuts optional
Place the cucumber cubes in a large bowl.
Add the coconut shavings, peanuts and cilantro.
In a small saucepan, warm the oil and toast the mustard. Then slightly roast the red chillies. Garnish the salad with this seasoning. Mix the salad.
Add salt and lemon juice just before serving. Otherwise the cucumbers become soft and juice out removing the freshness.
