Garlicky Cauliflower Curry

Cauliflower is one vegetable that I love to play around with in different dishes.
Cauliflower chickpea couscous, Chinese style baked cauliflower, cauliflower in sesame sauce etc to name a few.
And it's healing for me to cook cauliflower since each floret represents a tree of life.

I wanted a garlicky curry irrespective of the spice level. Threw in some garlic and whole spices for a yummylicious curry.

2 cups cauliflower florets washed and steamed
1 small green pepper, chopped
1 large onion chopped
1 to 1.5 large cluster tomato minced
1/4 cup kale finely chopped
1 garlic bulb or 8 cloves garlic pressed and minced
1 inch ginger chopped
4-5 French beans chopped into inch pieces and cooked al dente
1/4 cup peas boiled


2 tsp cumin
1 tsp fennel seeds
4 cloves
1/2 tsp black cumin
2 cardamom pods
1 black cardamom
2 tsp paprika
2 tsp coriander powder


Salt 1.5 tsp
2 tbsp oil

In a saucepan, saute the kale, onions and peppers until soft in a tbsp oil.





In another saucepan, use the remaining
tbsp oil to toast the spices. Add ginger and garlic and brown them slightly. Mix in the minced tomatoes, salt and let them cook until soupy.  Stir in the spice powders.
Puree the tomatoes and spices.

Pour the puree on the sauté, mix in the veggies and heat the curry on medium flame for 5 mins until the florets are covered with the spicy sauce.

Serve hot with flatbreads or rice.
