Beet and Peanut Stir Fry ( Thoran)

Needed a side dish cum accompaniment to white bean garlic soup and rice. I
religiously eat beets once in 3 weeks, for blood detoxification. Usually, consume beets in the form of cutlets, grilled slices in sandwiches or beet-berry smoothie.  But, made a stir fry today. Love the earthy flavor, the beet has.

Beets help maintain or balance blood pressure, especially the systolic.  Beets (canned ones) are best blood purifiers.  They help the bone marrow produce good blood and strengthen the immunity.  Beets are sweet, but not bad for diabetics. Beet smoothie is a good post work out drink

2 medium beets finely cubed
1 large jalapeño
1 small onion julienned
2 tbsp Peanut halves
2 tsp mustard
A sprig curry leaves
1 tsp lemon juice
1 tbsp cilantro chopped
5 tbsp dessicated coconut
1 tbsp coconut oil
Salt to taste

In a skillet or wok,  add the oil and splutter the mustard.  Add the peanuts and curry leaves. Toast them for few seconds and add the onions.  Saute till onions are soft.
In the meantime, boil the beets in little water till they are cooked al dente.  I prefer them crunchy.
Roast the jalapeño on a skillet in 1/8 tsp oil and dry grind them coarsely or with very little water.
Mix the cooked beets with onions and peanuts and stir fry them after adding salt. Just before serving, add the ground coconut and jalapeño and mix well. Garnish with cilantro and lime juice.

The stir fry was an excellent side dish with rice and soup.
