Lemonade would have been perfect, but it doesn't stay fresh for more than 6 hours. I wanted something as nourishing and refreshing as a lemonade in a smoothie.
Perfect combo: cucumbers with lemons.
Humble easy to -go smoothie.
1/2 cup organic Persian cucumber cubes
1/2 cup green apple chops
1/2 cup pineapple chunks
Juice of 1 lime
1.5 tsp freshly ground pepper
1/4 cup coconut milk
1/4 water
Couple of ice cubes optional
Combine all the ingredients in a blender to smoothie them. Add the fresh lemon juice, blend for a few seconds and then add the freshly ground pepper and pulse.
Just what I needed on a hectic day!!
( you can add mint or honey too)
