Grilled wraps with spiced potatoes and yogurt




It was one of those Street food craving days when I was on a time constraint to cook.
The wraps are easiest to make with very little veggies. I always have mint chutney in my refrigerator, comes in handy when I make Street foods.

For the potato wraps:

2 large potatoes chopped into cubes and boiled( with or without skin)
Flour tortilla wraps, Gluten-free ones if possible
1/4 cup yogurt
Mint chutney ( recipe at the bottom of the page)
Date chutney optional
1 onion minced
1 inch grated ginger
1.5 jalapeƱos grated after deseeding
Red or green pepper julienned

1/4 tsp turmeric
1 tsp sesame
1 tsp cumin
Salt to taste
1/2 tsp paprika optional
2 tbsp oil
Cilantro for garnish

In a pan, add the oil and toast cumin and sesame.  Add the jalapeƱos and ginger.Saute for a few seconds. Mix in the onions and peppers. Saute them till they are cooked but not too soft nor too charred.
Add the turmeric and paprika ( if you need extra spicy potatoes).
Mix the potatoes with the spices and stir fry them after adding salt.



Grill the tortillas and place the spiced potatoes in the center of the tortilla . Drizzle some yogurt and mint chutney on them. You could add date chutney too.
I liked the wraps with just the mint and yogurt.
Garnish with cilantro Fold the tortilla into a wrap.  Ready to be served.

For mint chutney :
Wash a bunch of mint leaves with warm water and let them dry for  a few minutes.
Roast a tsp flax seed / peanut or sesame and a green chilly or 2 in a tsp of coconut oil. Add this in the blender with the mint leaves and half lemon sized tamarind. Puree them with 1/4 cup water. Add 1/4 tsp salt and chutney is ready. Refrigerate for use. The shelf life is about 2-3 weeks since oil is added to the chutney and green chilly is toasted.

For a quick date chutney, microwave 1/4 cup dates for 30 seconds and blend them when moist with a tbsp of tamarind pulp. You could add water if it's too thick.
Remember chutneys are semi liquidy.
Boil on stovetop and it's ready to use.
You could substitute dates with  fig or fig butter or Apple butter.
