Dopiaza is a simple South Asian curry made with onions. Usually, the dish has meat/ lamb. The vegetarian version is equally popular.
I used peas and green pepper since they marry well with Pistachio and Pumpkin seeds.
Original dish does not use nuts, just hot spices. It's December , so I gave a holiday flavor to the dish by using pumpkin seeds.
1 large or 1.5 medium green pepper chopped into semi big chunks
2 medium sized onions cut into chunks
1 large tomato
7-8 shelled pistachio
1 tsp roasted pumpkin seeds
1 inch ginger grated
1 tsp paprika
1 tsp cumin
1 tsp coriander powder
1 tbsp garam masala
1/4 cup cooked peas
Salt to taste
3 tbsp oil
Fresh Cilantro for garnish
In a pan, splutter the cumin in oil.Saute the onions for 2 mins and add the green peppers and saute till the onions and green peppers cook or are slightly soft.
Puree the tomato in a blender with the nuts and seeds.
Add the puree to the onion and green peppers. Mix all the spice powders, ginger and salt. Add the cooked peas and simmer for 10 mins. Garnish with cilantro and serve hot with rice or Naan bread.
You could also add potatoes, mushrooms, chicken chunks.
