French Beans and Green Pepper Stir Fry



What is the best accompaniment for rice and yellow lentil soup ( Indian Daal)? Dry curry or stir fry is the best answer.
They are subzi, poriyal, palya, upkari, foogath to name a few.
I made the basic stir fry ( palya) with French beans and green pepper. 

1/4 lb French beans washed and cut into 1 inch pieces 
1 small green pepper 
1/2 onion minced 
1/4 tsp turmeric 
1 tsp mustard 
5-6 curry leaves 
1.5 tbsp coconut oil 
1 tbsp yellow lentils 
4 torn dried red chillies 
1 tbsp Grated or dessicated coconut 
Salt to taste 


In a stir fry pan, warm the oil and add mustard seeds. Once the mustard crackles,  mix the red chillies, curry leaves, turmeric and yellow lentils and saute for few seconds. Add the onions and green peppers and mix them with the spices. Saute them till onions and peppers become soft.
In the meantime, cook the beans in microwave for 3 mins or on stovetop with about 1/2cup water.I prefer stovetop method since the beans don't get dehydrated.  They must be cooked to al dente. 
( you could also cook all the veggies with the spices in the stir fry pan with water.sometimes, veggies don't cook evenly in the pan. Green peppers cook without water as well,so they might get mushy)
Once the French beans are cooked and onion and peppers are done, mix them together in the stir fry pan, add salt and Saute for 3-4 mins.
Garnish with coconut and serve hot.
