Thai and South Indian coastal cuisines are very similar. They are light and naturally vegan. Coconut, tamarind pulp and dried red chillies are commonly used in everyday food.
Summer or winter,rain or shine, this soup soothes me. I make it when we eat rice.
The mix of spices makes this soup very dense in good nutrition.
Turmeric is a natural antiseptic and anti Inflammatory. Helps in preventing arthritis.
Red chillies are known to be antiviral and
cure shingles and other viral diseases.
Coconut is a trending superfood when consumed in moderate quantities.
Sambar or yellow lentil soup usually have 2-5 vegetables and pair well with rice,rice cakes, lentil crepes.
1/2 cup yellow lentils
6 dried organic red chillies
3/4 tsp turmeric powder
4 tsp coriander seeds
2 tsp cumin
1 tsp sesame
1/2 tsp fenugreek seeds
3 tbsp fresh grated or dessicated coconut
Small lemon sized tamarind
2 tsp Mustard seeds
1/4 cup cilantro
A sprig curry leaves ( optional)
Salt to taste
2 tsp oil
For vegetables: 1 large onion chopped into large pieces, 1 small zucchini chopped into large cubes,1 chayote squash or yellow squash cubed.
Soak the yellow lentils for an hour and cook them after washing.
Roast the red chillies, turmeric, sesame seeds, coriander seeds, cumin, tsp fenugreek seeds. Grind them to a paste with a lemon sized tamarind and coconut.
Boil the vegetables . Add salt and stir in the ground spices. Mix in the yellow lentils and stir the soup so that the spices are evenly spread through the veggies and lentils.Use the broth from lentils and veggies in the soup.
Add water so that consistency is neither too thick nor too diluted. Simmer for 15 minutes.
In a pan, add 2 tsp oil, splutter mustard and curry leaves and pour them into the soup.
Garnish with cilantro before serving.
