Too much high fructose corn syrup in store bought energy bars these days that I had to look into alternatives. Some of the organic brands didn't come with any less sugar. Some had rice, oats, frosting etc that quite didn't appeal me.And others were either too chewy or too crunchy
I needed energy, not sugar. Raw energy to say so.
After some research online on homemade energy bars, I came up with my own recipe with my favorite ingredients.
1.25 cup fresh seedless dates/figs( I used dates to begun with),
1/2 cup raw unsalted pistachio,
1/2 cup unsalted raw almond,
1/4 cup unsalted raw cashew or walnut( cashew is more flavorful anytime)
1/3 cup dessicated coconut,
1 tsp toasted sesame,
1/4 unsweetened cocoa,
1 tbsp flaxmeal.
If dates are not soft or fresh, microwave them for 15 seconds, and pulse them in a food processor or blender. Powder all the nuts and mix them with cocoa , coconut, sesame and flaxmeal. Add pulsed dates and make a dough. Either make balls or flat squares. If the balls are not smooth or are cracking, add more ground dates.
You can also mix 1/8 tsp natural sea salt.
In the pic above, I have added close to 1/2 cup dessicated coconut since I love coconut so added 1.5 tbsp flaxmeal to help bind the balls.
