Have small quantities of lot of veggies in the refrigerator?? I am in that situation and wanted to get rid of veggies before buying fresh produce.
Mix vegetables curry seemed like a perfect dish, I could throw in as many veggies as possible, different colored ones and some nuts. Cold winter evening made me cook this spicy but creamy curry.
For the spices:
1 tbsp cumin
1.5 tsp coriander powder
1.5 tsp paprika
1/4 tsp powdered cinnamon
1/4 tsp turmeric
2 tsp garam masala ( curry powder)
5 garlic cloves
1 knob ginger
1/3 cup almond milk or heavy whipping cream
3 tbsp oil
1/2 cup cilantro
I used about two cups of vegetables: French beans,potatoes, peas,carrots, ( you could add some cauliflower florets, green pepper chunks too)one onion, one tomato.
Crush the garlic and ginger slightly before chopping them. Cut the French beans into 3/4 inch pieces, Carrots into semi thin rounds and onions Coarsely chopped.
In the oil, splutter the cumin and saute the chopped ginger and garlic for a minute and add onions. Saute them until onions are almost transparent. Add the Coarsely chopped tomatoes and continue the sautéing.
Adding salt cooks the tomatoes without any water. Mix in all the spice powders to the sauté and let it cool.
Puree them with the chosen dairy or non dairy milk. Add the cilantro and blend for few seconds.
Pour the puree on the vegetables and simmer for 10 mins. Mix in some slivered almonds and raisins.
Pairs with rice and Naan bread.
