This is an awesome side dish or accompaniment with rice and lentil soup. Simple but nutritionally rich. Most South Indian meals include stir fries.Not too spicy, and a combination of one or more vegetables.
I used just potatoes and French beans in this dish. Will talk about variations at the bottom of the page.
You need:
1/4 lb French beans washed, ends trimmed and finely chopped.
1 large white potato chopped into cubes
2 dried red chillies coarsely cut
A tsp mustard
Salt to taste
2 tsp oil
1 tsp dessicated coconut for garnish
1 tbsp Peanut halves( optional)
Method
In a pan, add the oil and mustard.Once you hear the mustard pop and splutter, mix in the red chillies and peanuts. As soon as the red chillies are roasted, mix in the chopped vegetables, add salt. Mix the veggies.cover with water just enough to soak them and cook the veggies covered until done. The vegetables are not mushy but al dente.
Garnish with coconut before serving.
Variations :
Same recipe holds good for French beans with shelled edamame. Chinese long beans with green peas, Finely chopped cabbage with carrot chops and green pepper.
