Smoothies are a delight to the taste buds, especially so in summer.
Inspired by pineapple lemon juice during my recent Costa Rican visit, I made this smoothie with hints of colada with mint.
Mint and pineapple marry beautifully to give the smoothie a refreshing taste. Pineapples are loaded with fiber and Vitamin C, they have the ability to curb sugar cravings and aid in weight loss. Mint on the other hand soothes the digestive system. When combined with coconut milk, the smoothie is a summer bliss.
1 cup pineapple chunks, organic ones
1/3 cup organic coconut milk
4-5 sprigs of fresh mint, preferably spearmint
1 tsp chia seeds
1 tbsp golden flaxmeal
1/2 inch ginger optional
Soak the chia seeds in water for about 10 mins. Blend the pineapple and ginger with coconut milk to semi thick consistency.
Add the flaxmeal and mint and blend for few seconds. Smoothie is ready to be served. You can use ice cubes when blending for extra thickness.
