Most of my summer-autumn breakfast were on the go, thanks to the move in mid summer.
It took about six weeks( weekends actually)to settle in . Am spoiled by the abundance of fresh fruits in summer.
I have always experimented with fruits -veggies combination in grilled sandwiches, curries, pancakes and smoothies.
Smoothies make a perfect on-the-go breakfast when you add cereals and nuts to them.
Almost a complete meal.
And I love to make my own fresh smoothies every single morning.
After I tried the usual spinach- mint, banana- peanut butter, carrot-orange etc, I was ready for a new flavor and a new combination.
I wanted a light smoothie, but rich in nutrients. I found finger millet in my pantry and decided to use it in a smoothie.
Am a Bangalorean local and Finger Millet
( called Ragi in Bangalore)was part of my early childhood staple food. Why? Because it is rich in Vitamin Bs, iron and calcium.
I reintroduced the millet in my diet couple of years back by adding it to mostly pancakes and puddings. And am glad I did.
Here is the smoothie I made:
1/2 cup fresh raspberries
1 tbsp millet
1 tbsp oats
2 tbsp 70% bitter chocolate chips
1 tbsp shredded coconut ( optional)
1/2 cup pure almond milk
Blend the dry ingredients first: the oats, millet, coconut and chocolate chips. Add the raspberries and grind. Then add the almond milk. Smoothie is ready.
( for almond milk: soak a handful of almonds in hot water overnight. Blanch them the next day and grind them into a paste, add water to the paste depending on the consistency you need, medium consistency preferred)
You can add honey/ maple syrup or Brown sugar for sweetness and crushed ice for an extra thick smoothie.
For non-vegans , use 1% lowfat milk.
