My first experience with donuts was in Japan, and they were the best ones I ever had . Krispy Kreme had newly introduced donuts glazed with fresh grapefruits and other tropical fruits, very natural flavors. And then Mister Donut who made usual donuts including the donuts with dessicated coconuts.
When I moved to US, supermarkets like Safeway and Ralph's were like donut heavens to me. But my happiness died soon when I discovered the high sugar content and disappointed with the sugary artificial glazes. Krispy Kreme was average , nothing new to offer.
I craved for many years for fresh donuts with low sugar and found some at WholeFoods. Delighted to know they were vegan. After a thorough online research , found a base recipe for Vegan donuts. Tried the recipe and the donuts turned out to be crispy.
These donuts went straight to the trash.
I didn't lose hope, gave the recipe a second try but this time, with my eyeballed proportions and my own ingredients:
1/3 cup organic brown or raw sugar
3 tbsp canola oil
0.4 cup apple sauce or berry /beets puree
A pinch baking powder
A pinch salt
3 tablespoon flaxmeal
2 tablespoon millet powder(ragi)
1/3 cup coconut milk/ almond milk
3/4 cup all purpose flour
1 tsp pure vanilla extract
Mix all the wet ingredients , salt , baking powder and slowly add the flour. Whisk it to a thick consistency.
Bake for 25 minutes at 350f.
This recipe yielded 6 donuts. 95% close to the soft Wholefood donuts. My experiment doesn't end here. What about the glaze??
I cannot eat sugar, feels grouse and heavy after eating it. Why can't I make a spicy glaze. My brain was shooting ideas on salsa glaze or bitter marmalade glaze.I opened my refrigerator and jalapenos grabbed my attention. Perfect choice for spicing up the donuts.
I glazed the donuts with tempered bitter chocolate ( vegan chips are very bitter)
And then garnished three of the donuts with sliced almonds, another with dried basil and red chilli flakes and the last one had to have an Indian twist, garnished with Sev( fried ramen).
My personal favorite is the one with red chilli and dried basil.

For chocolate donuts, add 3-4 tbsp pure unsweetened cocoa to the batter.
