Kale ka Saag


Baked Kale chips and breakfast smoothies with kale were getting stereotyped and I am not a big fan of Kale. But on the other hand, I did not want to give up on this greens due to high nutritional value . Its a good source of Vitamin A, C and K, calcium , potassium and iron.
As I was making palak paneer, I was struck by the idea to use kale and try " kale ka saag" like sarson ka saag .
And it turned out to be my best fusion dish ever.


1 bunch/bag  spinach
3/4th bunch /bag kale

1 large purple onion chopped
1.5 medium tomato coarsely chopped
6 pods garlic chopped
1 inch ginger finely chopped
Salt to taste
1-1.5 teaspoon chilli/paprika powder
1 teaspoon coriander powder
1/2 tablespoon allspice or garam masala powder
1/4th teaspoon turmeric
1 teaspoon cumin
1 tablespoon kasoori methi
Optional paneer

Wash the greens thoroughly and boil them separately since both have different cooking times.
Spinach cooks in 4 mins but kale takes 5-6 minutes.
I don't recommend pressure cooking or microwaving since overcoo
king destroys their nutritional content .
Boil water first and add the greens in hot water and simmer .
Water level should be just enough to soak the greens .
Turn off the heat when the greens are cooked a little more than al dente.

In a wok, add 1.5 tablespoon canola oil and splutter the cumin.
Add the chopped garlic and ginger. Saute them for about a minute and add the chopped onion. Saute till they are transparent. Add the kasoori methi and continue the saute.  Now add the tomatoes and let them cook.
Once they form a puree, add all the spices and mix.
Turn off the gas and let it cool.
Puree the mixture in a blender and pour it in the wok.
Also blend the greens together to a coarse  paste with their broths.
Consistency should be of a thick creamy soup.
Mix them with the onion tomato puree and add salt.
Stir the curry and simmer for about 10 mins till it turns creamy.
Add the paneer cubes and mix.



Without the paneer, this recipe is totally vegan and gluten free .

This recipe serves 8 and can be served with roti or parata.
