Whole Grain Pudding.
Detox salads are pretty common,and its become my staple diet.
Indian New year festivities prompted me to try out detox dessert. Both north and south indian desserts are so much calorie laden, that they are banned now in my kitchen. Instead of making a salad, I tried to infuse Indianism into these whole grains by making a dessert .
Sheera is a very common household everyday dessert in Indian households. The recipe calls for semolina and lots of clarified butter and sugar.
Instead of using semolina and butter, I made a non fat version of it. Here is the recipe:
1/3 cup Bulgur Wheat, 1/3 cup Quinoa, 1/3 cup coarsely powdered dry roasted oats, and 3 tbsp semolina. Soak all of them in water just enough to dampen them . When soaking , add 2 tbsp milk/almond milk. Soak for 2 hours.
Drain out the water and in a skillet, add 1 tbsp canola oil and roast the above grains. Add brown sugar(1/2 cup)and water maybe 1.5 cups or more to cook the grains. Once they are done, add few strands of saffron, , 1 tsp of powdered cardamom and 1 tsp of nutmeg and few cranberries. Once again, mix everything well. You could make squares or round shapes out of the pudding .
Serve warm or cold. Lasts about 2weeks in the refrigerator.
I was surprised how the grains married well with each other to give a soothing detox dessert.:-)
